9 Grown-Up Gourmet S'mores

For the Cookies:
  • 1 box chocolate cake mix
  • 6 Tbsp butter, melted and cooled to room temperature
  • 2 eggs, whisked
  • For the Marshmallow Buttercream:
  • 1 c. butter, softened but not to room temperature
  • 1 1/2 c. powdered sugar
  • 1 (7oz) jar marshmallow fluff
  • 1/4-1/2 tsp. almond extract
For the Chocolate Ganache:
  • 1 c. heavy cream
  • 1 1/3 c. semisweet chocolate chips
  • pinch of salt
  • 1 graham cracker, crushed (for topping)
  1. Preheat oven to 375°.
  2. Place cake mix in a large bowl; add cooled butter and whisked eggs.
  3. Mix dough with wooden spoon or hands till it comes together. Use a cookie scoop to form dough into 1-inch balls. Place on an ungreased cookie sheet and bake for 9-11 minutes. Transfer to a wire rack and allow to cool completely.
